Coffee Crusted Veal Chops

Anne shows us just how easy it is to cook a veal chop and create a fantastic family meal for dinner. You can use any rub that your family loves and create a fantastic dish! You can use any veal chop that you can get your hands on, a rib chop or a loin chop! Cutlets might even go great with this rub. The best way to make sure any meat is fully cooked is to use a meat thermometer. Cook time really depends on the size and thickness and veal chops come in different thicknesses! Ingredients

  • 1 1/2 tsp. chili powder
  • 1 1/2 tsp. instant coffee powder
  • 1/2 tsp. brown sugar
  • 1/4 tsp. dry mustard
  • 1/4 tsp. garlic powder
  • 1/4 tsp. salt
  • 1/8 tsp. black pepper
  • 2 bone-in veal chops (about 1 inch thick)
  • 1 Tbsp. olive oil

Instructions

  1. Preheat oven to 375*.
  2. In a small bowl, whisk together the chili powder, instant coffee, brown sugar, dry mustard, garlic powder, salt, and pepper.
  3. Pat the veal chops dry with a paper towel. Generously sprinkle the spice rub over both sides of each chop.
  4. Preheat a large, non-stick skillet over medium high heat. Add the olive oil and then sear the veal chops for about 1 1/2 minutes on each side or until a golden crust forms.
  5. Finish cooking the veal in the oven at 375* for about 10 minutes or until they reach an internal temperature of at least 145*F.
  6. Allow the meat to rest for a couple of minutes before serving
