– Veal cutlets

– 2 TBSP. Olive oil

– 4 TBSP. Butter

– 1/4 Cup Fresh lemon juice

– 1/4 Cup Capers

– 4 Cloves Garlic

– 1/2 Cup White Cooking Wine

– 1/2 Cup Chicken Bone Broth

– Salt and pepper, to taste


  1. Season veal with salt and pepper.
  2. Sear in olive oil until golden, then set aside, cover with aluminum foil
  3. In the same pan, melt butter and sauté garlic and capers.
  4. Pour in lemon juice, chicken broth, and white wine reduction.
  5. Plate, and drizzle that savory sauce.
