Smokey Garlic and Cheddar Stuffed Burger

This Smokey garlic and cheddar stuffed veal burger was created by our friend Dairy Carrie and the recipe has her secret to juicy, flavor-packed burgers! She uses chia seeds to infuse flavor into these babies, and they are so good. Allow the chia seeds to soak in the beer, garlic, and chipotle for at least 30 minutes before, or just do it the day before! The chia seeds only add flavor to these burgers, and even better they are STUFFED with cheddar cheese. Carrie calls for an aged cheddar cheese, and she is from Wisconsin so I would take her advice on that. Top it with your choice of bun and you’ve got a great burger for summer grilling (or any time of the year for that matter).

Ingredients

  • 1 Tbsp. chia seed
  • 1 Tbsp. minced garlic
  • 1/3 cup Beer (Lager or Ale)
  • 1 Tbsp. smoked chipotle Tabasco OR 1 tsp. ground chipotle powder
  • Ground veal
  • 3 oz aged cheddar
  • 3 buns of choice

Instructions

  1. Start by adding beer, garlic and chipotle to the chia seeds and allowing to soak for at least 30 minutes.
  2. Add chia seeds to ground veal and mix well.
  3. Divide ground veal into six equal parts. Form burger patties with each part. Add cheddar to the center of three patties. Top with the other patties and press edges firmly to seal.
  4. Grill or pan fry until the internal burger temperature is 160˚F.
  5. Serve on a toasted bun with your favorite toppings.
