Spinach and Feta Mini Meatloaves

Spinach and feta veal mini meatloaves are easy and delicious portioned meals. Portioned as mini loaves these cook quick and serve even quicker. These Spinach and feta loaves are packed with flavor and protein, making a perfect family dinner or lunch.

These meatloaves are fork tender as fresh made or when frozen for make ahead meals. This recipe is a meal prep dream. Combining all the ingredients in a bowl, mix them together careful not to over work the mixture. Split the portion into six different sections and form little loaves. Place each loaf on a parchment paper covered sheet and place in the oven.

Double this recipe and put half in the freezer for easy meal prep. Eat these loaves for lunch or dinner when you are busy. Spinach and feta mini meatloaves freeze easy and make the perfect protein for a balanced meal. This recipe makes 6 mini loaves for six servings, but can be adjusted into five for larger portions. Use a meat thermometer to check the temperature  before removing from the oven.

These meatloaves pair perfectly with a steamed vegetable and some potatoes. Or serve with a side salad or mashed potatoes and corn. Ingredients

1 pound ground veal

10 ounces frozen chopped spinach, thawed and squeezed to remove all the liquid

4 ounces block feta cheese, finely crumbled

4 ounces sundried tomatoes in oil, drained, finely chopped

1 small yellow onion, finely chopped

1 egg

4 cloves garlic, minced

1/4 cup parsley

¼ cup almond meal/almond flour (or breadcrumbs)

1 teaspoons oregano

½ teaspoons salt

½ teaspoons pepper

¾ cup ketchup

1 tablespoon apple cider vinegar

½ teaspoon garlic powder

Instructions

  1. Preheat the oven to 350 degrees. Line a baking sheet with parchment paper.
  2. In a large bowl, add all the meatloaf ingredients (except for the last three) and mix them together thoroughly. Shape the mixture into 6 equally sized mini meatloaves.
  3. Place the meatloaves on the baking sheet, spritz them with cooking spray and cook for 20 minutes or until they reach 165 degrees F tested with a meat thermometer.
  4. While they are cooking make the glaze. Mix ¾ cup of ketchup with 1 tablespoon apple cider vinegar and a ½ teaspoon garlic powder.
  5. When the meatloaves have finished cooking brush the glaze on top of each one and enjoy!
