Ingredients

Veal scallopini

  • 8 thin veal cutlets
  • 1 cup breadcrumbs
  • 2 eggs
  • ¼ cup flour
  • Salt + pepper
  • ½ tsp Italian seasoning
  • Olive oil, for frying
  • Lemon wedges

Spring Caesar

  • 2 heads romaine, chopped
  • 1 cup snap peas, sliced
  • 3–4 watermelon radishes, shaved
  • 1 cucumber, sliced

Basil Caesar dressing

  • 1 cup basil
  • 1 garlic clove
  • 2 anchovy fillets
  • 1 egg yolk
  • 2 tbsp lemon juice
  • 1 tsp Dijon
  • 1/3 cup olive oil
  • Salt + pepper
  • 1/3 cup parmesan cheese

Toasted breadcrumbs 

  • 1/2 cup breadcrumbs
  • 1–2 tbsp olive oil
  • Pinch salt
  • 1/2 tsp Italian seasoning

Instructions

  1. Heat olive oil in a small pan over medium heat. Add the breadcrumbs, a pinch of salt, and Italian seasoning. Stir frequently until golden brown and crisp, about 3–5 minutes. Transfer to a bowl and set aside.
  2. In a blender or food processor, combine all dressing ingredients except the parmesan cheese. Blend until smooth and creamy, then taste and adjust seasoning as needed. Stir in the parmesan cheese and set aside.
  3. If needed, gently pound the veal cutlets to an even thickness. Season both sides with salt and pepper. Set up a dredging station with flour, beaten eggs, and breadcrumbs mixed with salt, pepper, and Italian seasoning. Coat each cutlet first in flour, then egg, then breadcrumbs.
  4. Heat oil in a large skillet over medium heat. Working in batches, cook 2–3 cutlets at a time for 2–3 minutes per side, or until golden brown and crisp. Cutlets should be cooked to an internal temperature of 145 F, it is often difficult to take the temperature of a thin veal cutlet so watching the color is important. Transfer to a wire rack or paper towels to drain. Finish with a squeeze of fresh lemon juice and a light sprinkle of salt.
  5. In a large bowl, combine the romaine, snap peas, watermelon radishes, and cucumber. Add the dressing and toss gently until evenly coated.
  6. Place a veal scallopini on each plate and top with a generous portion of the spring Caesar salad. Finish with the toasted breadcrumbs and additional Parmesan, if desired.
