Quesadillas with Your Kids

A twist on a classic quesadilla this recipe uses ground veal and cheese delivering a delicious meal packed with protein. Even better, bring your kids into the kitchen and have them help you prepare dinner. They will love building this delicious dinner with you for the whole family.

This recipe is simple, but delicious. Proving you don’t have to over think dinner time to have a balanced and delicious meal. Some optional sides for these quesadillas are beans, corn, or vegetable sticks. Not only is this a great dinner, but they also serve as a great lunch. Serve with sour cream, Greek yogurt, or some extra salsa! You can truly make these your own by adding your favorites to the meal. With the ability to switch it up, this is a recipe your family wont get sick of.

Serves:
4 Kids or 2 Adults

Ingredients

  • 4 Taco size Tortillas (6 inch)
  • 4 Tablespoon hummus of choice
  • 8 oz Cooked, ground veal
  • 2 Cups sliced tomato (or other veg of choice)
  • 1 Cup shredded cheddar cheese
  • Salsa and or sour cream for serving

Instructions

  1. Preheat grill or oven to 375 degrees Fahrenheit. Lightly grease baking sheet, and set aside.

Assemble each tortilla:

  1. Spread 1 tablespoon of hummus on one entire side of the tortilla.
  2. Sprinkle 2 oz (¼ cup) of veal, and ¼ cup cheese on top of one-half of the hummus-spread tortilla.
  3. Lay tomato slices on top of veal/cheese layer.
  4. Fold the side with just hummus on top of the veal, cheese and tomato side (the tortilla will be folded in half). Lay folded tortilla on a lightly-greased baking sheet.
  5. Repeat steps 2-5 until all tortillas are assembled.
  6. Place baking sheet in the oven or place on the grill for 6-7 minutes on each side, until tortillas are crispy brown and cheese is melted.
  7. Remove from heat and let cool for 5 minutes and slice quesadilla into triangle-shaped pieces before serving. Serve with salsa and/or sour cream for dipping. Enjoy!
